Method:

· Bring the potatoes to the boil over a high heat. Once they are boiling reduce the heat to a simmer and cook for 15 minutes, or until tender.

· Drain the potatoes and leave to cool.

· Once the potatoes have cooled, place them in a large bowl and add the chopped celery, egg whites, peas, parsley and enough salt to taste.

· Add enough mayonnaise until you have a creamy consistency.

· Cover with aluminum foil and place in the fridge until you are ready to serve.

MAIN COURSE

Beef and Mushroom Stroganoff

This is an acid reflux diet recipe which has been altered in order to agree with acid reflux sufferers.

Ingredients:

Serves 4 people

1 pound of boneless beef sirloin steak 3 cups of sliced mushrooms 8 oz of cooked noodles, without salt or fat 1 cup of low-fat sour cream 1 tablespoon of flour 3 teaspoons of instant beef bouillon granules ½ teaspoon of thyme 1/3 cup water 1 tablespoon vegetable oil Nonstick vegetable cooking spray

Method:

· Slice the steak into ¼ inch strips.

· In a clean bowl, mix together the flour, sour cream, bouillon granules and thyme.

· Take a large pan and spray with the nonstick cooking spray.

· Place the pan over a medium heat and add ½ tablespoon of vegetable oil.

· Add the mushrooms and cook for 2 to 3 minutes, remove them and set to one side.

· Lower the heat and add ½ tablespoon of vegetable oil and heat until hot.

· Add the steak strip and cook for approximately 4 minutes.

· Remove the beef from the pan and set to one side.

· Add the water to the pan and bring to the boil.

· Add the sour cream, flour, bouillon granules and thyme mixture along with the mushrooms and steak to the pan, cooking until thickened.

· Serve with the noodles.

DESSERT

Spiced Apples with Caramel Sauce and Ice Cream

This dessert literally takes 10 minutes from beginning to end when using a microwave and is the perfect acid reflux diet recipe.

Ingredients:

Serves 6

4 large apples cored and sliced into 16 wedges ¼ cup of apple cider or apple juice 3 cups of vanilla ice cream 6 tablespoons of caramel topping, ready bought in jars 2 tablespoons of brown sugar 1 teaspoon of pumpkin pie spice Toasted sliced almonds

Method:

· Place the apples, apple cider, brown sugar and pumpkin pie spice into a medium sized microwave dish. Toss the contents so that the apples are thoroughly coated. Place a lid on the dish and microwave for 10 minutes on high.

· In 6 separate serving bowls, add a scoop of ice cream and place a spoon of the apple mixture over the ice cream. Finally, drizzle with a tablespoon of caramel sauce and sprinkle with the almonds.
